- 2 tablespoons Olive oil 2 tablespoons butter.
- 1 piece of fresh ginger ½ inch long 1shallot, 2 cloves garlic - minced
- 2 cups of long grain rice
- 1 tablespoon cardamom seeds
- 1 teaspoon turmeric
- 1 teaspoon saffron
- 1 cup dry white wine
- 4 cups of fish stock
- 1 teaspoon salt
- ¼ teaspoon black pepper
In a stew pot put oil and butter over medium heat.
Add minced ginger, shallot and garlic and stir for 1 minute.
Add turmeric, saffron and rice and sauté for 2 minutes.
Add the cardamom seeds and wine.
Let it cook for 4-5 minutes stirring occasionally.
Add the fish stock and let simmer for 20 minutes (depending on directions of rice)
Cover with a kitchen towel and keep warm.
